Miso pumpkin soup

Ingredients
500 g pumpkin (peeled and diced)
1 onion
1 carrot
1 apple
1 little branch of celery
2 tbsp coconut oil
2 tbsp miso
1/2 tsp grated ginger
pepper
1/2 tsp nutmeg
2 spring onions


Prepare all the vegetables : finely chop the onion, roughly chop the carrot, apple and celery. In a large pot, heat the coconut oil. Sauté the onion for about 5 minutes on medium heat, then add the pumpkin, carrot, celery and apple. Season with the ginger, pepper and nutmeg. Cook the vegies for about 7 minutes, then cover with boiling water. Leave to cook for 20 min until the vegies are tender. Add the miso paste, and blend the soup with an immersion blender. Serve in bowls, topped with sliced spring onions.
